ADIRONDACK GROUSE
(ref. NY Sportsman - 1992)

First - Start with the Stuffing
Ingredients:
16 ounce of Pepperidge Farm seasoned stuffing mix
2.5 - 2.75 cups chicken broth
1/2 cup butter
1.5 lbs winesap apples, peeled and chopped
1.5 lbs granny smith apples, peeled and chopped
3/4 lb raisins (try the white)
option: add diced celery and onion

The Birds
Stuff the birds
(cook excess stuffing in casserole at 300 degrees for 45 minutes)
Place birds in buttered shallow roasting pan and set aside.
Mix 1/4 cup butter with 1/4 cup dry vermouth and 1/2 cup of apple sauce.
Add 1/8 teaspoon of crushed tarragon, blend and spoon over birds.
Make enough sauce to cover birds.
Roast at 325 degrees for 30 minutes.
